Rocky Road Chocolate Cornflakes: This is a one bowl mixture and an easy one for a movie night or just to get the younglings into the kitchen. This recipe uses nuts so substitute anything to your dietary or allergen requirements. Remember, this is about having fun and getting into the kitchen

Equipment
Saucepan (optional)
Heatproof bowl
Ice cream scoop or spoon
Cupcake cases
Ingredients (Remember, based on your dietary and allergen needs, you can interchange the ingredients)
– 200g milk chocolate (or chocolate of your choice)
– 110g unsalted butter
– 3 tbsp golden syrup
– 110 g cornflakes
– 110g roughly chopped digestives
– 70g dried cherries/ raisins/ dried fruit of your choice
– 40 g sultanas
– 90g mini marshmallows (you can roughly chop larger ones)
– 50g pecan
– 40g white chocolate chips
Method
– Melt the milk chocolate, butter and golden syrup either in the microwave in 30 second bursts or in a heatproof bowl over a saucepan of simmering water.
– Melt and mix slowly stir with a wooden spoon. If you melted over the water remove from the heat and leave to cool but not to set.
– Take the cornflakes, roughly chopped digestives and the remaining ingredients, except the white chocolate chips.
– Fold them all until everything is evenly coated by the chocolate then add the white chocolate chips.
– Use either the scoop or a tablespoon to put the mixture into the cupcake cases.
– Put into the fridge to chill for a minimum of an hour.
